Hong Heng Fried Sotong Prawn Mee is a third-generation hawker stall at Tiong Bahru Market that has been awarded the Michelin Bib Gourmand for seven consecutive years. Helmed by Manfred Lim, who took over from his uncle, the stall specialises in a single dish: fried Hokkien mee stir-fried with sliced fish, sotong (squid) and prawns, served with a house-made chilli sauce. The stall traces its history back to the old Lau Pa Sat before relocating to Tiong Bahru in the 1980s. What sets Hong Heng apart is the rich seafood stock that permeates every component of the dish, from the noodles to the prawns and lard, delivering a deeply savoury flavour without being overpowering. Manfred's skilful wok technique imparts a satisfying wok hei, the prized smoky char that distinguishes great Hokkien mee. The stall opens only on weekdays and Saturday, and long queues are a constant feature, a testament to its enduring popularity.
