Baguo Grilled Fish is a Sichuan-style grilled fish stall located within Food Republic on Level 5 of 313@somerset. The stall serves whole fish grilled over high heat to develop a charred, crispy skin, then finished in a bubbling sauce loaded with Sichuan peppercorns, dried chillies and aromatic spices. Diners can choose from a range of flavour profiles, including the signature mala (numbing and spicy), hot and sour, and green pepper chilli, with spice levels customisable to suit individual tolerance. Each portion is substantial enough for sharing between two to four people, and additional toppings such as golden mushrooms, beancurd skin and lotus root can be added to the bubbling pan.
